Sunshine hours, sea breezes, soil profiles, rainfall and land topography; - site selection is a 100 year investment and can’t be overstated. It starts with the viticulturist’s understanding of these elements which dictates the vines growing environment and can only be enhanced by the crafting hand of the viticulturist. The selected fruit is chosen from vineyards owned and managed on behalf of Auswan Creek.
Value 2 - Vine Age
There is something magical about an old vine and the fruit produced. It twists out of the soil, gripping for life on the wire, and offering a limited but richly rewarding prize. The vine’s cordon and the prized fruit can be likened to the out stretched arm of Mother Nature, giving her scared gift to the winemaker to craft. A 20 year minimum vineyard age is standard across Auswan Creek’s wine range.
Value 3 – Attention to Detail
Selecting fruit, checking press cycles, monitoring fermentations, nursing maturing oak barrels and scrutinising blending programs is part of a winemaker’s day. It is estimated our winemaker tastes each parcel of wine more than 100 times during the winemaking process. It is this attention to detail that makes the difference between great and exceptional wines.
Value 4 - Bottle Maturation
The old art of cellaring is revived at Auswan Creek. After 12-18 months of barrel maturation the wines are bottled and experience a further 6-12 months of cellaring before sale. We do the hard work, so upon sale these big, rich structured wines are approachable. The wines can be tasted at release or will continue to reward those with the patience to wait 5-15 years.
